Our favourite easy chilli recipe

We love chilli – my kids love it (not too spicy though!) and I love this easy chilli recipe because it’s easy to make, and a great option for batch cooking. I tend to cook 3 or 4 times the amount we need for one meal and then freeze it in 3-4 person portions. Chilli is also an easy meal to serve – we tend to have it with rice but it’s also great served in tacos, or just with crusty bread or a baked potato. If we are feeling fancy then we make guacamole too 🙂

An easy chilli recipe, not too many ingredients, and great to cook up in batches to freeze.


Ingredients

Units Scale
  • 1 onion
  • 2 garlic cloves
  • 1 red pepper
  • 1 tsp chilli powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 450g minced beef
  • 300 ml beef stock
  • 400g tin tomatoes
  • 400g tin kidney beans
  • oregano

Instructions

1. Chop onions and fry gently
2. Add minced garlic, chopped red peppers fry for 5 mins
3. Add chilli powder, paprika and ground cumin, stir and fry for a few mins
4. Meanwhile brown the mince in a separate pan
5. Add mince back to saucepan along with stock
6. Add tinned Tom’s, salt and pepper and oregano plus a teaspoon of sugar
7. Simmer for 30 mins
8. Add kidney beans
9. Simmer for 10 more mins

It’s fine to serve at this point but I’d recommend cooking it gently for around another 30 minutes for a deeper flavour

Notes

Try different amounts of mild and hot chilli powder to find what works for you. The amount I’ve suggested is a pretty mild chilli.
