Description
Simple, quick and tasty, this makes a great school snack, or lunch box filler. A light, fruity cake that stores well. Once it is baked and it’s cooled down, you can slice it up and freeze it, taking out slices as you need them.

- 2 eggs
- 125 g margarine
- 125 g caster sugar
- 175 g self raising flour
- 2 tbs milk
- 175 g mixed dried fruit
- A sprinkling of Demerara sugar for the top
Instructions
- Line your baking tin and grease well
- Preheat oven to 180C
- Mix all ingredients in a bowl except the Demerara sugar
- Pour into the baking tin and cook in centre of oven for 20 minutes (or until golden brown)
- Leave in tin until barely warm and then turn out onto wire rack
- Sprinkle with the Demerara sugar
Notes
If you’re not making this to be taken into school then try adding nuts like walnuts or pecans.
