Papa’s fruity tray bake

Description

Simple, quick and tasty, this makes a great school snack, or lunch box filler. A light, fruity cake that stores well. Once it is baked and it’s cooled down, you can slice it up and freeze it, taking out slices as you need them.


Ingredients

Units Scale
  • 2 eggs
  • 125 g margarine
  • 125 g caster sugar
  • 175 g self raising flour
  • 2 tbs milk
  • 175 g mixed dried fruit
  • A sprinkling of Demerara sugar for the top

Instructions

  1. Line your baking tin and grease well
  2. Preheat oven to 180C
  3. Mix all ingredients in a bowl except the Demerara sugar
  4. Pour into the baking tin and cook in centre of oven for 20 minutes (or until golden brown)
  5. Leave in tin until barely warm and then turn out onto wire rack
  6. Sprinkle with the Demerara sugar

Notes

If you’re not making this to be taken into school then try adding nuts like walnuts or pecans.
