When my kids were in primary school I was always on the lookout for snacks that they could take to school. Any snack needed to be quick to make, cheap, relatively healthy and must not contain nuts. One day after school my dad (the kids call him ‘Papa’) made them what he described as a ‘fruity tray bake’ and both kids loved it. When I collected them from Nana and Papa’s house I had a piece with a cup of tea and it was delicious. So I asked for the recipe and now it’s a regular bake in our household and the kids even make this themselves – it really is easy 🙂
The only equipment you need to bake this is a bowl, a baking tray, some scales, a bit of greaseproof paper and a spoon!

Description
Simple, quick and tasty, this makes a great school snack, or lunch box filler. A light, fruity cake that stores well. Once it is baked and it’s cooled down, you can slice it up and freeze it, taking out slices as you need them.
Ingredients
- 2 eggs
- 125 g margarine
- 125 g caster sugar
- 175 g self raising flour
- 2 tbs milk
- 175 g mixed dried fruit
- A sprinkling of Demerara sugar for the top
Instructions
- Line your baking tin and grease well
- Preheat oven to 180C
- Mix all ingredients in a bowl except the Demerara sugar
- Pour into the baking tin and cook in centre of oven for 20 minutes (or until golden brown)
- Leave in tin until barely warm and then turn out onto wire rack
- Sprinkle with the Demerara sugar

If you’re not making this to be taken into school then try adding nuts like walnuts or pecans.
